This module focuses on the practice of service sequence as well as complete operation for pre-service setup, pre-opening briefing and post service review. Emphasis is given on the students ability to comply to procedures for operating the restaurant as well as perform complete service sequence including upselling. This module also cover the preparation and organization by students of a themed dinner using banquet service.
